Description
PRODUCTION
The grape is processed in the shortest possible time to avoid any alteration, thus preserving the characteristics of the product in the best way. During the processa mixture of red vine (50%) and the white variety of Hondarrabi Zuri (50%) are crushed and tenderized during 15-18 hours and immediately taken to the press.The fermentation of the juice is conducted in controlled temperatures, avoiding the presence of oxygen as much as possible.
TASTING
- Visual phase: Cherry pink color. It stands out for its brightness and its abundant fine bubbles that persist for as long as a glass is enjoyed.
- Olfactory phase: It is a very fresh and aromatic txakoli, with notes of red fruit and jelly beans, and citrus.
- Taste phase: Refreshing and pleasant. It is a very fruity rosé that reminds the same flavors of the olfactory phase. It has moderate acidity and light tannins. It has a balanced composition that makes it have body as well as freshness.

PAIRING
Ideal to take it alone as an aperitif, or accompanying any type of vegetables, fish or white meat. It is a perfect combination to enjoy the good pintxos of the Basque Country, or more exotic cuisines such as Oriental or South American.
SERVING TEMPERATURE
It is recommended to serve cold, between 6 and 8°C.
